ATTITUDE FOODS – ROSEMARY BALSAMIC VINEGAR DRESSING
| Ingredients: 3 ½ tablespoons Attitude Foods Rosemary Infused Balsamic Vinegar 10 tablespoons Attitude Foods Lemon or Garlic Infused Ex Virgin Olive Oils Attitude Foods Kaffir kick to season. |
To make:
Place oil, seasoning and vinegar in glass jar and shake well.
Use over green salads, tomato olive and goat fetta salads, and antipasti.
Or use as a marinade for char grilled vegetables.
ATTITUDE FOODS – ROSEMARY CHARGRILLED VEGETABLES

To make:
Cut vegetables so that pieces are large enough not to fall through the grill.
Marinate the following veges ‘in Attitude Foods Rosemary Balsamic Vinegar Dressing’ for 1 - 2 hours before cooking:
Courgettes - cut diagonally across the length into ½ inch thick slices
Onions – peel baby onions and leave whole. Slice larger onions from the top to the bottom in ¼ inch thick slices, leaving some of the root end attached to keep slices intact
Mushrooms – If larger than 3 inches across, slice in half or into thirds, otherwise leave whole.
Some vegetables will get soggy on the grill if they marinate too long. The following should be generously brushed with marinade 10 – 15 minutes before grilling.
Eggplant – cut diagonally or length wise into ½ inch thick slices, thin asian or baby eggplants can be cut in half length wise
Green or firm red tomatoes – cut into ½ inch thick slices
Kumara, potatoes, and pumpkin – parboil until just tender, then cut into 1 inch thick slices
Directions:
The charcoal should be at the grey ash stage, or adjust grill so heat is medium range.
Most vegetables will need 2 – 3 minutes per side, and should be cooked until blackening on outside yet tender on the inside. Cooking times may very depending on the intensity of the fire or height of grill. Can season to taste with a little of any Attitude Foods salt & pepper mixes after cooking.
ATTITUDE FOODS – ROSEMARY GRILLED/BARBEQUED PORK FILLETS
| Ingredients for marinade: 2 cloves fresh garlic Juice and zest of 1 orange Bunch of fresh thyme leaves finely chopped, or 1 x teaspoon of dried thyme 6 x tablespoons of Rosemary Infused Balsamic Vinegar Other ingredients: 4 x 400g/14oz pork fillets (preferably NZ free range or organic Pork) Attitude Foods Kaffir kick ‘gourmet salt & pepper mix’, or substitute with NZ sea salt and freshly ground black pepper You could substitute with chicken if pork is not available |
Directions:
In mortar & pestal or blender, crush and mix the marinade ingredients together.
Place the pork fillets in dish and season with Attitude Foods Kaffir kick ‘gourmet salt & pepper mix’, or substitute. Then coat with marinade, cover, and refrigerate. Leave to soak for at least 1 hour before use. Can make in morning and leave in refrigerator ready to use that evening.
When ready to cook:
Place meat on barbeque or under hot grill for 15 – 20 mins or until cooked and nicely charred. Whilst cooking turn meat and brush generously with left over marinade.
When cooked, allow fillets to rest for 5 mins, before slicing and serving on large platter, garnished with fresh rosemary.
Serve with char grilled vegetables, or baked pumpkin seasoned with Attitude Foods Roast Vege Spice, and fresh summer salad.
To use Attitude Foods Roast Vege Spice, simply cut pumpkin into cubes or baking sized slices, sprinkle with Attitude Foods roast vege spice, and drizzle with one of Attitude Foods aromatic Infused Extra Virgin Olive Oils, cover dish and place in oven on 180 degrees until tender/cooked.
